I made orange cupcakes for Easter. I love to bake, but I only make two kinds of cupcakes: chocolate ones and these orange ones. The cake is the dinette cake recipe from my 70’s Betty Crocker cookbook. I use butter, not shortening. The frosting is simple: cream cheese, orange zest, and confectioners’ sugar to taste. I like to make it very orangey, but not too sweet. A fourteen-year-old girl didn’t like it when she tried it today, but the adults loved them.
